Summer Salsa

Yesterday I brought this wonderful summer salsa to Easter brunch with The Boyfriend’s family. Not only did The Boyfriend and I want to eat it all before we took it over, but it was also a big hit with the rest of the family. It’s not very spicy, but tastes incredibly light and fresh. I will definitely be making this one all summer long!

Summer Salsa

Refreshing with a little kick!

I originally got this recipe from a Nancy Bennett, a nutritionist work with. She’s fabulous (especially with construction workers) and so are her recipes. Not only does this stuff taste fresh and delicious, but it’s pretty good for you too!

Ingredients

  • 1 ripe avocado, peeled and sliced
  • 1 cup ripe mango, chopped
  • 1 jalapeño pepper, seeded and finely chopped
  • 1/2 cup jicama, chopped
  • Juice of 1 lime
  • Salt and pepper to taste
  • 1/4 cup cilantro, finely chopped
Details
  1. In a mixing bowl, combine the avocado, mango, jalapeño pepper, and jicama. Remember that this is salsa, so you want everything chopped fairly small.

    Next time, I’ll chop the mango & avocado a little smaller

  2. Squeeze in lime juice

    Lime Juice

    Using your hand to squeeze limes works fine too, I just happen to have a fancy lime squeezer

  3. Season to taste with salt and pepper
  4. Mix in the cilantro

    I put in a little less cilantro than called for. I’ll probably put in about a 1/3-cup next time

  5. Let salsa sit at least 20 minutes for flavors to meld before serving (this makes a big difference!)
