Yesterday I brought this wonderful summer salsa to Easter brunch with The Boyfriend’s family. Not only did The Boyfriend and I want to eat it all before we took it over, but it was also a big hit with the rest of the family. It’s not very spicy, but tastes incredibly light and fresh. I will definitely be making this one all summer long!
I originally got this recipe from a Nancy Bennett, a nutritionist work with. She’s fabulous (especially with construction workers) and so are her recipes. Not only does this stuff taste fresh and delicious, but it’s pretty good for you too!
- 1 ripe avocado, peeled and sliced
- 1 cup ripe mango, chopped
- 1 jalapeño pepper, seeded and finely chopped
- 1/2 cup jicama, chopped
- Juice of 1 lime
- Salt and pepper to taste
- 1/4 cup cilantro, finely chopped
- In a mixing bowl, combine the avocado, mango, jalapeño pepper, and jicama. Remember that this is salsa, so you want everything chopped fairly small.
- Squeeze in lime juice
- Season to taste with salt and pepper
- Mix in the cilantro
- Let salsa sit at least 20 minutes for flavors to meld before serving (this makes a big difference!)
